These little dessert cups are so easy to make and are so fancy. Serve these raspberry and vanilla mousse dessert cups at your next dinner party and you will wow your guests!
WHAT YOU NEED
To start off this recipe you need to prepare the Jell-O according to the package directions. Pour about a 1/4 cup into the glasses you will be using and then turn them on their sides. For this, I placed a towel at the end of my 8x8 baking dish and propped the cups on the edge of the pan. If you are using round cups, you can place them on their sides inside of a muffin tin. Place the Jell-O in the refrigerator to set. While the Jell-O is setting, make the pastry cream and place it in the refrigerator to cool. While the pastry cream is cooling, whip up the cream to soft peaks. Reserve about 1/2 cup of whipped cream for decorating the dessert at the end. Fold the rest of the whipped cream into the pastry cream and place into a piping bag or sandwich bag with the tip cut off.
This step is totally optional, but I like making things fancy. Once the Jell-O has set (approximately 2 hours), get the tip of the glass wet by painting water on the sides with a paint brush. (I tried just dipping the tip of the cup into a bowl of water, but this made the glass TOO wet which resulted in clumps of sugar.) Dip the rim of the glass into a bowl of sugar. Viola, fancy cup.
Pipe the mousse into the cup, making sure to fill it all the way to the top. Pipe a dollop of whipped cream on the top and sprinkle on some raspberries. Your fancy dessert is ready to serve!
