We recently celebrated my husband's birthday. He said he wanted a GIANT s'mores cake. That is exactly what we created for him. It is layered with chocolate cake, marshmallow, ganache, and another layer of chocolate cake. By the way, it was delicious!

The first step is to make the cake. I used a 8" square pan for this cake which can be found here. I made one large cake and then used a knife to cut it in half for the top and bottom. Once I made the ganache and marshmallow, I dumped each of these recipes in separate 8" square pans to get the same shape as the cake. I put the ganache in the fridge to set up and let the marshmallows set up over night. The next day I made a batch of swiss meringue buttercream frosting and added in 1/4 cup cocoa powder to make it chocolate meringue buttercream frosting. I covered the cake in the frosting and then used graham cracker crumbs to cover the frosting on both the bottom and top layers to make it look like a graham cracker. I then used a fire starter, because I don't have a torch, (maybe that can be my next fun kitchen gadget I buy) to add some color to the marshmallow. I placed that on the bottom cake followed by the ganache. I then topped it off with another layer of cake. I used a ruler and a knife to put the indents on the cake to make it look more like a graham cracker. Viola! Put some candles in that baby and have the special birthday guy blow them out! Enjoy!
